With a 144hz monitor, do I have to get >144fps all the time? On Overwatch I always get >144fps so that will be fine but can I still play games like Skyrim that I cap to 60 on a 144hz monitor?

Looking online a lot of people say there is screen tearing if you run at a higher FPS than your monitor refresh rate. However, I have never experienced screen tearing or at least never noticed it on multiple computers that ran multiple games (TF2, Overwatch, GTA V, CS:GO, and many more games) way higher than 60 fps (60hz is my current refresh rate). For example I run Overwatch uncapped and it runs from maybe 260fps to 300fps, but I get no screen tearing on my 60hz monitor. But then I see so many people complaining about screen tearing, so how come I don't get it or don't notice it??
- As I said before I run Overwatch uncapped at ~300fps. If I use a 144hz monitor, will my FPS change in any way? Like will the number at the top left of my screen that shows my FPS change at all? From my understanding it seems that the FPS won't change, and it's just the monitor will be able to show more frames (144 frames instead of 60) out of that 300FPS?
